Recently I found myself in posession of 1 pound of green onions. It seemed like a reasonable decision at the time, but once I had a giant bag of them in my fridge I discovered that I maybe didn’t have quite as many things to make with them as I thought. I’d heard about grilling green onions and I thought, why not roast them? It was an excellent decision.
Roasted green onions are savory with an edge of sweetness from the caramelized edges. They’re an excellent addition to a rice bowl, a great side with pasta or a meat dish, or just on their own. Honestly, I could eat a whole bowl of these by myself without anything else accompanying them. They’re that good.

Ingredients
- Green onions ( at least one bunch)
- One lemon
- Olive oil
- Salt
Detailed Method
Start the oven preheating to 375oF.
Wash your green onions and trim both the roots and any rough looking tips off the green parts.

Split the trimmed green onions length-wise and transfer to an appropriately sized baking dish. Ideally, the green onions will be able to fit in a single dense layer on the bottom of the baking dish.

Drizzle the green onions with olive oil, then use a microplane or a fine grater to zest the lemon over the green onions. Sprinkle with salt and then toss to distribute the seasoning evenly.

Bake for 15 minutes, then pull the pan out of the oven and toss the green onions. They’ll look soft at this point but not caramelized or crispy. Redistribute them on the pan so they’re spaced evenly, then put back in the oven.

Check every 10 minutes, stirring each time you pull them out, until they’re your desired level of done-ness. I like mine a little crispy at the edges with delicious brown caramelized bits as well. When I pull mine out they look like the picture below.

Serve as a side, as one topping on a rice bowl, or just have these as a delicious veggie snack!

Preheat the oven to 375oF.

Wash the green onions under cool water, removing any old, dried foliage as you do.

Trim the roots and the tips of the shoots off, then split the green onion length-wise.

Place prepared green onions in a suitably sized baking dish. Drizzle with olive oil, sprinkle with salt, then zest the lemon over the green onions. Toss thoroughly to coat.

Bake for 15 minutes, then toss and replace in the oven. Check at 5 to 10 minute intervals until the green onions reach the desired level of done-ness. See pics above for a good reference point.
